...so I missed last weeks project so we have one more coming soon, but tonight was more for me then it was for the rest of the family-although I think Greg will enjoy it once he gets a chance to eat it. We had Panda Express for dinner and for you locals that have no clue what that is it is MY kind of Chinese food. I don't think there are any around here which really is sad, because I could probably keep them in business...although after tonight who knows.
We had Orange Chicken and Chow Mein and this is how I made it:
Orange Chicken:
3 large chicken breasts
1 egg
1 1/2t salt
oil (for frying-I use canola)
1/2 cup cornstarch, plus
1/4 cup flour
add the chicken, egg, and salt together in one bowl. In another bowl add the flour and cornstarch together. Spoon (with a slotted spoon) the chicken into the flour mixture and mix it all together-it becomes a globby mess but that is how it is supposed to be. Heat your oil to about 350* I don't have a thermometer so I just guess based on a test piece. Cook your chicken in small batches until they are golden brown and cooked through. Let them drain on paper towels while you continue on with the sauce...
Orange Sauce:
1 1/2 tablespoons soy sauce
1 1/2 tablespoons water
5 tablespoons sugar
5 tablespoons white vinegar
1 orange, zest of
Mix the above together and set aside. In a wok/saute pan add a T of oil and the following
1 T ginger root (I used the powder out of the jar)
1 t garlic powder
crushed hot red chili pepper to taste
1/4 cup green onion, chopped
1 T garlic red wine (you can use rice vinegar, but I didn't have any)
heat through and then add the sauce you set aside bring it to a boil and add in the chicken. Toss around in the sauce and then add 1/4 cup water mixed with 1 T corn starch to thicken.
Chow Mein:
1 tablespoon vegetable oil
3 scallions, trimmed, and cut crosswise into 1/2-inch thick pieces
2 cups sliced napa cabbage
1/4 cup sliced celery (yes I add this too)
1/2 cup bean sprouts
saute until the cabbage is wilted and the veggies begin to soften then add
1/4 teaspoon granulated sugar
1/4 cup sesame garlic sauce (found by the soy sauce)
1/2 tablespoon soy sauce
1/2 tablespoon cornstarch, dissolved in
1 tablespoon cold water (set aside)
red pepper flakes, to taste (I kinda over did this one tonight...oops heart burn will be kicking in later)
1/4 lb vermicelli, cooked (I have tried a LOT of Asian type noodles and to be honest I think regular spaghetti noodles are best!) add this to the veggie/sauce and mix together. Add in cornstarch/water mixture to thicken.

This was a very GOOD dinner-I say so humbly-but it was more complicated then some of the others especially since I tried to cook everything at once and got dinner on in under an hour. It probably would have been beneficial to make the chow mein earlier in the day or even the day before as that is something that gets better the longer it sits. My kitchen was also determined a disaster area so if I make it again I will make sure to get in writing that Greg volunteers to clean it up. It was worth it though since we are 2 hours from a Panda Express. This meal will feed Greg and I a few lunches too since the kids only eat plain noodles and plain chicken...silly kids.
So yesterday was PTC for the first term and I just have to say my kids are little smarty pants. Most of you know Dax has always had a hard time saying his "r" among other speech impediments (like the whole replacing "tr" with the "f" sound=embarasing moment in the truck isle in walmart). Anyways he is doing SO well-he over exaggerates the "R" sound, but hey it is there and with time it will become habit. His teacher also said that he basically knows just about everything he needs to know by the time he graduates from Kindergarten...what?! Yeah this from the same teacher that suggested I hold him back a year because his birthday was in June and he was shy during his testing. She said it will be a challenge for her to keep him challenged through the rest of the year. YAY for my awesome kid! Jacey's teacher only had praise for her as well. She is above average in most of her areas and I am proud to say she does not take after me in the reading, spelling and vocabulary departments-I was terrible until just a few years ago. Her teacher did comment on how long it takes her to complete her projects, but we have always known this to be true of Jacey. She is very much a perfectionist and she amazes her teacher with how beautiful her assignments turn out once she completes them. Her teacher did not seem to want to discourage this, and I as her mom am grateful as I think it is good that she takes her time to do her best. YAY for my awesome kid!
